Maple Weekend March 19th and 20th from 10am-2pm

We are ready to fill some maple-lovin’ bellies with all things maple! After two years of not being able to host our annual open house, we are excited to serve our local customers again. 

We are stocked up on all kinds of yummy treats! 

Syrup, candy, butter, nuts, popcorn, cookies, spices and more!

Kickin' Off 2022 Sugaring Season Today!

And so it begins...

Maple season 2022 has officially started with our first boil of the season today!  Steve was able to bring in his first truckload of sap and boil it down to produce 10+/- gallons. We plan to bottle some of it after making candy and cream.  

Maple Weekend 2022 is right around the corner on March 19th and 20th. We will be having our annual Open House and (weather permitting) having a demonstration on boiling sap. Because of the recent pandemic, we have not been able to have our open house, so this year, we are very excited to get back to this tradition!

Busy Maple-Makin’ Day! (A Day in the Life)

Phew! What a day! Steve and I got up early (we are almost always up before five), had a quick breakfast and got started. He prepared the canner to bottle syrup, and I started heating the syrup on the stove for candy and cream. 



The cream came to temperature first, so I put it in the “sugar” room to cool. The candy syrup came to temperature soon after. I poured it into the molds. 


Steve set up the small bottle canner in the kitchen because of the oppressive heat out in the sugarhouse (it was a muggy 89 degrees). He bottled 130 nip bottles for a wedding order. As soon as I finished the candy, I took over and bottled 64 assorted nip bottles to sell at the markets.


As Steve jugged syrup out in the sugarhouse, I heated syrup for coating the candy (this will be dipped tomorrow after the it is dry).  Steve finished several hours later, having “jugged” 55 gallons of syrup!


After dinner, we made the cream. Our cream machine is not user friendly for one person, so we often make it together. We made 19 jars of delicious, smooth maple cream




What an incredibly productive day!

Off to the Markets!

We started selling at the farmer's markets on June 19th.  On Saturdays we are in Lancaster from 9am to 12pm and in Gorham on Thursdays from 3pm to 6pm.
